Zucchini-a love/hate relationship

So, I didn’t quite make the deadline for July post this month but it is close. I was kinda waiting for this to emerge! And I don’t just have 1 recipe, but 2 for this love to hate garden produce.

So what do we know about zucchini?

-one zucchini is a zucchina

-they were brought to America in the 1920’s by the Italians

-April 25th is National Zucchini Bread Day

-the flowers are edible and considered a delicacy

-largest zucchina was 69 1/2 inches long and weighed 65lbs

-zucchini has more potassium than a banana

-only fruit that starts with a Z

Let’s start with this hotdish:

First, brown 1 pound lean hamburger with a sprinkle of garlic pepper.

Sizzle

Then, add 2 cups beef broth, 1 can Italian tomatoes, and 2 cups bow tie noodles.

Poor guy didn’t get bow tied!

Bring to a boil, add zucchini and simmer for 15-20 minutes or until noodles are tender.

I like to cut the zucchini into pie shape pieces.
Look at that color!

Serve with Parmesan cheese!

Let’s make Zucchini Bread!

First, beat 3 eggs together.

Then add sugar!!

Next, oil, vanilla and applesauce.

Then, 2 cups of grated zucchini. I leave the green on the zucchini. It looks prettier. I think!

Now for the dry ingredients flour, baking soda and powder, salt and cinnamon.

Divide into 2 regular sized loaf pans.

Bake for 50-60 minutes or until toothpick comes out clean.

Beef Zucchini Hotdish

1 pound ground hamburger

1/4 teaspoon garlic pepper

2 cups beef broth

1 can Italian diced tomatoes

2 cups bow tie pasta

2 cups zucchini

Parmesan

Brown hamburger with garlic pepper. Then add beef broth, Italian tomatoes, and bowtie pasta. Bring to a boil. Then reduce heat to medium and add zucchini. Cook, stirring frequently until pasta is done. Serve with Parmesan cheese.

Zucchini bread

3 eggs

2 cups sugar

1/2 cup oil

1/4 cup applesauce

3 tsp vanilla

2 cups grated zucchini

3 cups flour

1 tsp baking soda

1/4 tsp baking powder

1 tsp salt

2 tsp cinnamon

Mix first six ingredients. Then add dry ingredients. Mix until combined. Divide between two regular loaf pans. Bake at 350° for 50 to 60 minutes or until toothpick comes out clean.

My husband and I traveled to Alaska in June for our 10th anniversary. While traveling through a small town, I saw these poppies planted in front of a business. I had to stop and take a picture. You can’t tell very well from this picture, but they were huge! Come to find out later, this is probably because of the extended sunlight that Alaska has in the summertime.

  • I am not a fan of the Z but have never tried the hot dish, I’ll have to try it.
