So here it is February, basically closing in on the end of it, and there is no January posts to be found. I certainly did try, but when I tried to log in it wouldn’t. So I talked to the tech guys, and they said I had to download Chrome. That was all fine and good, but I had to have WiFi, and I don’t have it at my house, and one thing lead to another and here we are. Anyways, this blog is about avocados and more importantly avocado toast!
I was first introduced to the idea years ago by one of my friends, and just loved it! Recently, though, with us going to California with family, I began to experiment with different combinations, so I thought I would share them with you.
My first thought was to have a different avocado toast every morning on the rooftop watching the ocean. Picturesque, don’t you think? It didn’t happen. So some of them are from sunny California and others are from brisk North Dakota. Some sweet and some savory. But really the options are endless!
-Avocado Facts-
It is a fruit.
It contains 4 grams of protein, making them the fruit with the highest protein content.
They grow in pairs on trees.
Hass are the most popular variety grown worldwide.
The Hass tree was discovered by a mailman named Rudolph Hass in California in the 1930’s. He patented it in 1935.
They have the highest fiber content of any fruit, contain vitamin B6, C,E, potassium, magnesium-higher than a banana, and folate.
They were once called alligator pear (fitting I think)
Conquistadors used the milky liquid in the seed, that turns red, to write documents that are still preserved today.

Here is the first I made before we left for California, sweet. Not a surprise for me, I definitely have a sweet tooth!
It is two warm slices of Sourdough toast, mashed avacado, plain Greek yogurt, raspberries, and a drizzle of honey. So good! I got the idea of yogurt and honey drizzle from a Sams sample. Sometimes those turn out to be more than just a place for people to plug up traffic!
Next is a savory side,
This one has sourdough toast, mashed avacado, diced tomatoes, sliced grapes and Parmesan sprinkle. It reminded me a lot of the bruschetta that I wrote about a few blogs back. One of my favorites!
This one again was savory, not as good as the previous one but still tasty. Looking back now it reminds me of a Subway version. Toast, avocado, tomato, cucumber and black olives.
As you can see in this plating, I was really looking forward to somewhere warm. It was basically based off of cottage cheese and fruit, a great combination introduced to me from my father in law, and see what I can find in the fridge! Sourdough Toast, avacado, cottage cheese, pineapple, and cantaloupe.
So here is the only one I actually concocted on our trip to Cali. Everything bagel, avacado, tomato and pistachios!
We went to a farmers market in Oceanside and brought back some blood oranges and that is the inspiration for this last toast. 9 Grain Toast, avocado, Greek yogurt, blood oranges, and honey!

Look at those colors! Yum! So there you have it a couple combinations of avocado toast and like I said the options are endless. So if you haven’t tried avocado toast give it a try and make it personal to your tastes. You never know it might just might become one of your favorite things!

There really is nothing like the ocean. One day it is calm the other day it is full of powerful waves. Full of so much plant life and creatures. It is one thing ND is missing but maybe that is what makes it so much fun to visit!
