Harvest Gold Persimmon Pie

Hello! Here we coming in real close to the end of 2021! I just wanted to hop on here quick before its January and I miss another month of blogging. This recipe I found is for persimmon pie. I saw persimmons sitting there at the grocery store and next thing you know they are in my produce drawer saying, you better use us up or we are going to be mush. So along side my traditional pumpkin and peanut butter pies, I brought this untraditional pie to Thanksgiving! And in my opinion, it won’t ever trump pumpkin pie but it is a nice sweet, creamy and fruity pie. I personally didn’t taste much flavor from them but more of a sweet honey with the nod to orange flavor.

Are a excellent source of vitamin A, vitamin C, vitamin B, iron, potassium, and manganese. Also tannins and flavonoids!

After reading more about persimmons, I’m going to try adding them to my normal fruit intake! I think they would be great in oatmeal!

Persimmon Pie (recipe from The Runaway Spoon)

9 inch Pie Crust

Zest and juice of one orange

1 Persimmon

3 eggs

1 cup heavy cream

1 Tablespoon Butter, melted

2/3 cup granulated sugar

2 Tablespoons light brown sugar

1/2 tsp vanilla

Preheat the oven to 350 degrees. Blind bake crust for 15 minutes. Cool slightly. Zest the orange in to a large mixing bowl, then juice the orange. Place 2 Tbsp of the juice in a blender with the persimmon cut into pieces. (Remove the stem) Blend until smooth. Makes about 1 cup of purée. Crack the eggs into the mixing bowl and lightly beat, then stir in purée, cream and the butter until well combined. Add the sugars and vanilla and beat until well combined.

Pour the filling into crust and bake for 50 min to an hour until filling is set. Cool and refrigerate.

Speaking of cool as you can see winter is again upon us in North Dakota. In fact we are suppose to hit a low of -28 tomorrow! As I have probably said before I enjoy the different seasons and the beauty that each one brings. Not sure there is anything beautiful about -28 degrees but we will see. These leaves reminded me of copper pennies!
