Simple Pop of Summer

This garden was so beautiful in Omaha! Zinnias are on my list next summer! POP!

These past few weeks people have been talking about fall. I had just got back from Boundary Waters trip of being outside for 76 hours straight, and we just turned the calendar to August. We still have a full month people! Talk to me about Fall after Labor Day. I suppose it is because school has started up again, but it definitely isn’t fall today, the real feel is 93 degrees with 87% humidity. It’s more like the tropics of North Dakota. I’m not really ready for fall, I do like the leaves changing, coziness, lattes, apples, pumpkins, squash…. Ok it will come soon enough! So this month’s blog is not so much about a specific ingredient, but a product that I think is lots of fun and gives you endless options. The Zipzicle! I got mine off of Amazon, they make it way to easy. They were super easy to use and a great alternative to the not so natural freezees (sp?) So look them up and give them a try!

I went with peaches and blueberries, really because that was what was in my fridge at the time, but I’m excited to try a few other flavors after we use these up.

These peaches have literally been a staple of our summer.

If you ever find yourself in Fargo during the summer and the YFC Peach truck is out in front of the Scheels Home and Hardware. You really should stop and treat yourself to these peaches. They are the best!

I didn’t take a picture of this process but I just filled the bags up with the spout of the blender. Worked perfectly!

Peach Blueberry Zipzicle

1 1/2 cups chopped peaches

1/2 cup blueberries

1 cup vanilla Greek yogurt

Add fruit to a blender, blend. Add yogurt until well mixed. Fill zipzicle bags to the fill line and freeze overnight. Makes 7

This sunrise is one of the top sunrises that I have seen. It was coming up as I was going to work. I actually went pass my turn for work to pull off on a gravel road to take this picture and soak it in. I also gave myself 5 minutes to open the cafe, not a good idea, but I couldn’t miss it and one of the regulars in the morning said I shouldn’t worry about it they would wait for me to open. Thanks guys! I don’t know what it is about sunrises and sunsets! Is it kind of like the first and last pages of a good book? The anticipation of the new day and the last promise of the day. It’s probably a lot of things but whatever it is I LOVE it.

Have a wonderful Labor Day Weekend! Do all of those summer things you love best! Have a S’mores for me! I know I will be consuming a few. Which reminds me you have not really had a S’more until you have used the square marshmallows that fit the graham cracker. We tried them at Boundary Waters and my s’mores world was set on fire! Luckily not my marshmallow though! Maybe that’s what I will write about next month?
